There were a lot of records set for this year's Super Bowl. It was the most watched, and so forth. I also set a personal record--for the most nachos consumed in one day. It was just about the only thing we ate here, all day long. There was no dinner or lunch, just nacho after nacho until I felt like I would explode. I convinced myself that it was a balanced meal. Look at the veggies, provided by the pico de gillo, the protein from the cheese and refried beans. And the chips were made from stone ground corn, which automatically reduces the calories to almost nothing. That's what I believe and don't try to enlighten me.
Here's the tiny chicken burger I ate. Those are cherry tomatoes slices, to give you an idea of the size of the thing. Very virtuous. Then I had some more nachos.
Here's the vat of refried beans I made. Frankly, I don't want to eat them again for at least a year. There is such a thing as too much of a good thing.
Same thing with the guacamole.
I'm in rehab now. I should be out in about a week.
How funny, Sher! I was just telling Anne that all I ate on Sunday was a big plate of nachos that Barrett had made, and a tiny bowl of soup! But unlike you, I could eat some more!

Oh, how I love nachos... I wish I had some right now!!

Next year, I'm coming to your house for the Super Bowl! Yum!

Nachos are delicious -- but I can only eat them once a year or so -- too heavy, too salty, whatever. Now the guacamole is another story -- I think I could eat that every day!

Perhaps you can have too many refried beans, and I can personally attest to how easy it is to have too many nachos, but is it possible to have too much guacamole? Never!

Mmmm, nachos. I love mine with beans by hubby wont allow it. So I make bean dip on the side.

Love the nacho mass and how each chip has its own identity, some loaded with everything, others just a bit of salsa...Can't eat just one, that is for sure. An exercise in appreciation and attention, not gluttony.

Those nachos look good!

Oh wow they look AMAZING! Mmmmmm, jealous we don't have a Superbowl just so I've got an excuse to eat nachos! :D

Sher -
All the cool kids are going to rehab these days, but you may be the first to go for refried bean and guacamole overdose!

Nachos are totally healthy in my book!
Posted by: kristi | February 05, 2008 at 07:27 PM
Oh yum. I can't even remember the last time I had nachos. I wish I had some right now!
Good luck with the rehab. I promise I won't ask Dr. Phil to visit you.

I've been to Nacho Rehab before, as well. ;)
Hope you didn't make yourself too sick.

I definitely have missed something good... not Super Bowl... but your pre-rehab feast!

Oh bring em on Sher. Nope I don't think I could ever get enough!! I know they're healthy. (you didn't use lard did you?)

OMG, I love Tex-Mex food!!! I could it that everyday! All your dishes look terribly scrumptious! I can't wait to eat homemade tortillas again!
Cheers,
Rosa

All I can say is...mmmmmmmm.
I'll be happy to eat your portion of refried beans and guac while you're in rehab. :)
Posted by: anne | February 06, 2008 at 11:23 AM
mmm... nachos. i'm a total nacho recidivist. i think you could put pretty much anything on a nacho and i would eat it, especially if there was guacamole on the side. i didn't go to a traditional super bowl party this year, and i'm definitely feeling a little nacho-and-wing withdrawal.

But they were great while you were eating them right? :-) Yum. I could go for a big piled high plate of them right now. They look soooo good and so does that mini chicken burger!

Oh MANNN! (harrghrrrrrrrrrr!!!) - that means it all looks SERIOUSLY good. : )
Those nachos look S-I-C-K! (good sick)
How's Miss Sher and Miss Upsie?

We had nachos too..but my husbands don't look as good as yours. He also made hot wings (Franks hot sauce) of course..and his famous chili. My cat Simon got into the chili..both front paws..so we didn't eat "much" of it. :)

those look awesome and put my sad and desperate nacho making to shame. yum. i'll take over the eating while you recover.
Posted by: Randi | February 07, 2008 at 05:06 PM
You're too funny, Sher. I would have been hard pressed not to eat these all day either. They're beautiful - beans, guac and all!
Posted by: Christine | February 07, 2008 at 05:54 PM
I think nachos are my favorite food in the world and um, I want these. Like now. Please....

G'day Sher, I had to elbow the kitties aside and post a comment here - nachos are one of my all-time favourites, so when I saw the pictures of what you ate on Superbowl Sunday, I was in awe. I might even have to practise some nacho making of my own soon, inspired by your great photos of course.
Cheers

Well they look gorgeous! I would happily eat that all day...even if it meant a slow recovery....
And it WAS healthy!

The lighting on your pictures is excellent. Nachos are one of my guilty pleasures. Awesome post!

Those are some righteous looking nachos! YUM! I have to admit, if I go out and Nachos is on the menu, I contemplate buying them. They are usually the first thing I look at. Before figuring out how craptacular our local Denny's was, we used to order Nachos there if we went to eat there. lol!
