Well, this is how I ate one particular Cowgirl Creamery Mt Tam cheese. A Christmas present, it waited patiently in my fridge for the moment when we would be united as one. Finally, three days ago all the stars aligned properly and magic time was at hand. Even better, I was alone and didn't have to share it with anyone.
Obviously, I'm a little over the moon about Mt Tam cheese. And happily so. To begin, I looked at the pretty package, and realized it's been two years since I visited Point Reyes Station, the Northern Exposure style town where the cheese is made. I'll have to correct that soon.
After taking the wrapper off, I took time to admire the pretty white exterior. The rind is delicious, but some people don't like it at all. At this point, I pondered the ethics of eating the entire cheese myself. It's smaller than a medium orange, so inhaling the entire thing didn't seem gluttonous. And it was MY present. But, it's also made with triple cream, so I set aside two wedges for Bob.
My first slice on a cracker.
My first bite--note the CSI tooth impression. Ahh, the cheese is fabulous, soft but not runny, with that buttery, earthy Mt Tam taste and smell. After the first bite, I discard the cracker and eat the rest of the cheese unadorned, slice by slice, without any bread or crackers, which would be distracting.
All too soon, I'm faced with the last of the cheese. Till we meet again!

This is also really good with a pear butter or roasted pine nuts.
