This sure looks bright and appetising! Adding rice is surprising but rather interesting! Carrot soup works well with pumpkin and orange juice too!

Hi Celine. The rice is one way to add a little thickening to the soup. It's the way I've always made it, but some recipes call for bread or a potato to make it thicker. MMM----pumpkin soup is one of my favorites, and carrots would go very well with that. And, I have a recipe that uses a little orange juice in pumpkin soup.
